2 1/2 to 3 pounds boneless, skinless chicken thighs
1 1/2 cups store-bought sweet BBQ sauce
1 cup canned pineapple chunks, drained (juice reserved if desired)

Directions
Arrange the raw chicken thighs in an even layer on the bottom of your slow cooker. It’s fine if they overlap slightly; just avoid stacking them too high in one spot so they cook evenly.
Scatter the sliced onion and minced garlic evenly over the chicken thighs. Tuck some of the onion slices down between the pieces of chicken so the flavor permeates as it cooks.
Add the pineapple chunks on top of the chicken and aromatics, spreading them out so every portion gets a bit of fruit.
In a small bowl or measuring cup, whisk together the sweet BBQ sauce and pineapple juice until smooth and pourable. This thins the sauce just enough so it can seep down around the chicken and create a glossy, well-balanced cooking liquid.
