Preheat the oven to 180°C (static) or 170°C (fan assisted).
In a large bowl, beat the eggs and sugar until light and fluffy. You can use an electric mixer or a simple hand whisk.
Add oil and milk, continuing to mix until the ingredients are well combined.
Sift the flour, baking powder, and vanilla directly into the bowl and incorporate everything using bottom-up movements. The mixture should be smooth and lump-free.
Pour the mixture into the previously buttered and floured cake tin.
Bake for about 30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Once cooked, let it cool and sprinkle with icing sugar before serving.

You can store it under a glass bell jar or in an airtight container for up to 3 days at room temperature.
